Chocolate Quinoa Sesame Bars with Figs and Sunflower Seeds I Boxofspice

Hee! Mijn eerste post in het Nederlands. Niet lachen, ik doe mijn best! Hier gaan we.

Lange tijd hield ik alleen maar van hartige gerechten. Ik was nooit zo’n zoetekauw en al die geweldige Indiase zoetigheden en desserts zijn volledig aan mij voorbij gegaan. Jeez, wat een gemiste kans denk ik nu!!

Chocola kon ik nog wel waarderen, maar alleen maar in kleine hoeveelheden. Soms denk ik wel eens dat ik eigenlijk alleen maar deed alsof ik van chocola hield zodat mijn vriendinnen mij niet raar vonden. Het was simpelweg nooit zo ‘mijn ding’.

Maar tijden en mensen veranderen. Zoals dat ook de bedoeling is.

Mijn moeder zei altijd: “ De dag dat je stil staat en niet groeit is de dag dat je sterft.” Het is iets wat mij altijd is bijgebleven, ik ben me er voortdurend van bewust dat ik me moet aanpassen om te groeien. Het lukt me niet altijd, maar ik doe mijn best. Nog steeds…. En voor chocola doe ik tegenwoordig graag mijn best!

Ik ben nog steeds niet iemand die achter elkaar hele repen chocolade eet, maar kan ik echt uitkijken naar dat stukje chocola dat ik mezelf per dag toesta.

En chocola heeft ook waanzinnig goede eigenschappen voor de gezondheid.

Ik weet dat mensen altijd lachen als vrouwen dat zeggen, maar het is echt waar. Chocola is niet alleen voedzaam (ook belangrijk), maar zou ook vol anti-oxidanten zitten (klinkt in ieder geval belangrijk!), veel meer dan alle andere soorten voedsel. Het schijnt dat chocola bloeddrukverlagende kwaliteiten heeft en dat het kan helpen om het risico op hart- en vaatziekten te verminderen. Het zou ook goed moeten zijn voor het functioneren van de hersenen (maar misschien verbeeld ik me dat maar. Ik zou het graag beamen! ;-)). Dus in mijn boek is chocola gewoon superfood!!

Ik wilde deze ‘bars’ al heel lang maken en toen de mensen van Chove op mijn pad kwamen om wat bijzondere chocola te testen, was het juiste moment daar om deze voedzame en gezonde (ja gezonde, dus!) chocolate bars aan jullie te presenteren. Ze zijn super makkelijk te maken en zijn gemaakt met mijn nieuwe, favoriete ingredient, notenboter!

Ik ben blij dat ik een box van die handgemaakte bonbons weg mag geven. Ik kan je verzekeren dat ze heerlijk zijn. Ik moest ze natuurlijk wel eerst even uittesten….!

Als je net als ik een dagelijkse dosis chocolade nodig hebt (ik noem het mijn fix), zullen deze van Chove je zeker niet teleurstellen.

Het enige wat je hoeft te doen is een berichtje hieronder achter te laten en me te vertellen in hoeveel verschillende kleuren de verpakking komt. Vertel erbij hoe jij de Chove bonbons het liefste eet en de winnaar krijgt van mij een doos van deze ultieme verwennerij thuisgestuurd. De giveaway is helaas alleen toegankelijk voor Europese klanten.

Omdat het handgemaakte chocolade is, gemaakt van verse ingrediënten, zijn de producten beperkt houdbaar. Let daarom op de houdbaarheidsdatum en bewaar de chocolade in de koelkast.

Ingredients
  • Voor de Repen
  • 2 el kokos olie
  • 1 kop notenboter
  • 1 kop quinoa zaden
  • ½ kop sesamzaden
  • ½ kop zonnebloemzaden
  • 5 cms verse gember, gemalen
  • 2 el gemalen kokos
  • 10-12 gedroogd vijgen
  • 2 el honing
  • 120 gram donker chocolade

  • Voor de notenboter
  • 2 kop amandelen (of een andere soort noot)
Instructions
  1. Om de notenboter maken, rooster de noten op een bakplaat in de oven op ca. 150°C/300°F voor ongeveer 10-12 minuten. Verwerk de geroosterde noten (ongeacht de soort die je kiest) in een keukenmachine. Draai de machine op hoge snelheid gedurende voor ongeveer 10-20 minuten (afhankelijk van de sterkte van de keukenmachine). Schep het mengsel tussentijds een paar keer om, zodat alles gelijk wordt gemalen. Eerst krijg je een kruimelige textuur. De notenboter is klaar als het glad en romig is. Proef en voeg zout indien nodig is. Kan een paar weken in de koelkast bewaard worden.
  2. Voor de repen: smelt de kokosolie in een pan op laag tot middelhoog vuur. Snijd de gedroogde vijgen in grove stukken. Voeg de gesneden vijgen toe aan de pan samen met de notenboter en vers geraspte gember. Meng de onderdelen totdat het allemaal bij elkaar komt en bak het een paar minuten op een laag vuur. Haal van het vuur af en voeg alle andere ingrediënten toe, behalve de geraspte kokos en chocolade. Proef en voeg zout indien nodig.
  3. Bekleed een brownie ovenschaal met bakpapier en schep het beslag erin. Gebruik je vingers om alles bij elkaar stevig vast te drukken in een rechthoek. Zet de schaal in de koelkast. Smelt de chocolade op een bain-marie. Giet de gesmolten chocolade over de bars en gebruik een spatel om de chocolade gelijkmatig te verdelen. Bestrooi met geraspte kokos over de chocolade en zet terug in de koelkast totdat koud en stevig (minimaal 1 uur).
  4. Wil je de bars binnen een paar dagen eten, dan bewaar ze in de koelkast. Zo niet dan zij kunnen gemakkelijk worden ingevroren.

All my life I have only loved salty, savoury foods. I have never had a sweet tooth and all those wonderful Indian sweets (that I desperately miss now!) were always completely lost on me. Chocolate I could appreciate but in seriously small amounts! I think I might have even pretended to love chocolate just to fit in with all my girlfriends. But the truth was that it was just not my thing.

But things change. As they should. My mom always said that the day you stand still and don’t morph is the day you die. It is something I have lived by, to constantly try and and adapt and grow. It doesn’t always work. But it has served me well in life. To not be rigid, to welcome new things even if they were/are difficult as hell.

Back to chocolate! I’m still not someone who can devour an entire bucketful of chocolate but these days that one square of chocolate a day is something I look forward to.

And chocolate has crazy good qualities for your health as well. I know men always laugh when we women say that, but it is very true. It is not only nutritious but is supposed to be very rich in anti-oxidants, way more than any other kinds of food. This again may sound self-serving but chocolate is actually a super food! It is know to have properties that may lower high blood pressure and reduce the risk of cardiovascular disease. Good for brain function too which I can personally vouch for! Hehe

I have wanted to make these bars for a long time and when the opportunity to came to giveaway some fancy chocolates, it was the right moment to present these nutritious healthy (yes healthy!) bars to you. They are so super easy to make and incorporate my new favourite thing, nut butter!

Serves: 12-16
Ingredients
  • For the Bars
  • 2 tbsps coconut oil
  • 1 cup nut butter (recipe included)
  • 1 cup puffed quinoa
  • ½ cup sesame seeds
  • ½ cup sunflower seeds
  • 2 inch fresh ginger, grated
  • 2 tbsps desiccated coconut
  • 10-12 semi dried figs
  • 2 tbsps honey
  • 120 grams dark chocolate

  • For the Nut Butter
  • 2 cups almonds (or you could any sort of nuts on hand)
Instructions
  1. To make the nut butter, roast the nuts at 150°C/300°F for about 10-12 minutes. Transfer the roasted nuts (whatever kind you choose) to a food processor. Run it on high speed for 10-20 minutes (depending on the strength of the food processor). Scrape down the sides a few times. At first it will have crumbly texture. The nut butter is ready when it is smooth and creamy. Taste and add salt if needed. Lasts for a few weeks in the fridge.
  2. For the bars, melt the coconut oil in a sauce pan on low to medium heat. Cut the dried figs roughly and add to the sauce pan together with the nut butter and freshly grated ginger. Mix until it all comes together and cook for a few minutes on low heat. Remove from the heat and all the other ingredients except the desiccated coconut and chocolate. Taste and add salt if needed.
  3. Line a brownie baking dish with parchment paper and scoop the batter into it. Using your fingertips press everything together tightly into an even rectangle. Put in the refrigerator while melting the chocolate on a double boiler. Pour the melted chocolate over the bars and use a spatula to distribute it evenly. Sprinkle with desiccated coconut and put back into the refrigerator until cold and firm. At least an hour.
  4. Want to eat the bars within a few days then store them in the refrigerator. If not then they can easily be frozen.

Because the chocolates are made by hand with fresh ingredients, they have an expiration date. So please take note of that and store them in the refrigerator.

    The Chove chocolates look amazing! I love the pretty pretty packaging, 9 color combinations!

    Love those figs peeking out in each of those bars! So many wonderful ingredients in this beauties. I used to never be able to appreciate chocolate, but I’ve changed too. I started liking it when I was pregnant and the affection never went away. 🙂 And you are so talented– -posting in two languages! So impressed. 🙂

    There are 9 different combinations you can get the chocolates wrapped, but if you look exactly there are 12 different shades of 8 colors you can choose from 🙂
    I love your post! I usually eat dried figs by themselves but must admit that it gets a bit boring after a while. And I once bought puffed quinoa but didn’t really know what to do with it because I rather eat porridge than cereals what they don’t work with very well…Finally a solution!
    The Chove chocolates just look wonderful, I guess I would share some of them with my mum who is also very much into “special” chocolate but I may also keep some for myself as a special treat (Just being honest!)

It's been a while and so many of you have been so It's been a while and so many of you have been so kind to constantly ask me what's up. I think I owe you all some answers. My health has been up and down. Don't know if it's serious or not yet 😊 and an existential crisis continues. Well to be fair I've been in one for 30 years 🤣.
I've missed being here (the honest connections) and then again not (the intense superficiality). At my age the competition is too much (been there done that) and the blatant discrimination too much to handle. 
At the crux of it all I think I failed because I couldn't keep up.
Right now I'm charging up... it's taking the longest... must be my old bones needing all that power!

I spend my time cooking old favorites though, for people in my life that just don't want anything else haha. So here is a plum galette because they are in season and so delicious. I made it few days ago and it was gone the same day. 💕
