Rosewater, Honey, Lemon Soda + Lavender, Lime Soda

I still wake up every morning astonished at how beautiful the weather continues to be. Week after week of pure summer. I love the fact that I sometimes, actually feel uncomfortable due to the heat. That rarely ever happens here in Holland and its a feeling I’m not used to anymore, after having left an average of 45°C summers in India, some 15 years ago. But, I love it. It makes me feel alive. And, like my last post, I am desperate to catch its essence so I can live in its memory. I don’t want to take it for granted as much as I don’t want to take anything I love for granted.

Rosewater, honey, lemon Soda

1 cup water
1/2 cup honey (you could also use agave in same quantity)
1 lemon
2 tbsps rosewater
a few rose petals (optional)

to prepare
In a pan, on low heat, simmer the water and honey till dissolved. You could also add your (washed) rose petals, so that the water gets infused with its essence. If you do so reduce the rosewater to one tablespoon. Keep in mind that darker petals are stronger in flavor. Juice a lemon and add it to the honey water along with the rosewater. Cover pan and let cool.

Once fully cooled, add about 2 inches of concentrate in a bottle and top off with bubbly water. Close lid and refrigerate. Serve with ice cubes.

(You could also add the concentrate to individual glasses. For me, the ideal mixture was 4-5 tablespoons per glass. It is however totally up to you how strong or mild you might want it.)

Lavender, lime Soda

1 cup water
1/2 cup sugar
1 lime
1 tbsp dried lavender buds

to prepare
In a pan, on low heat, simmer the water and sugar till dissolved. Take off fire and add the juice of the lime with the lavender. Cover pan and let cool.

Once fully cooled, just like the Rosewater Soda, add about 2 inches of concentrate in a bottle and top off with bubbly water. Close lid and refrigerate. Serve with ice cubes.

(Again you could also add the concentrate to individual glasses. The ideal mixture was 4-5 tablespoons per glass for me because i like it a little mild. It is however totally up to you how strong or mild you might want it.)

    I know exactly what you mean about summer. We’re having a good one too. These look so lovely, light and refreshing, some of my most favorite flavors.
