Gujia/Sweet Fried Stuffed Pastry

Gujia/Sweet Stuffed Pastry I Boxofspice

Gujia is a very traditional sweet dish eaten purely at the time of Holi, an indian festival which celebrates good over evil. It is an amazing festival where we color one another with dry and wet colors.
Gujias eaten with chai or just by themselves, remain the ever classic.

Ingredients
  • For the Pastry
  • 2 cups all purpose flour
  • 3 tbsps ghee
  • oil to deep fry

  • For the Filling
  • 2½ cups dried milk
  • 3¼ tsps dessicated coconut
  • 15-20 chopped cashewnuts
  • 15-20 blanched and sliced almonds
  • a pinch of nutmeg powder
  • ¼ tsp green cardamom powder
  • 2½ cups icing sugar
Instructions
  1. Sieve flour and fold in the three tablespoons of ghee. Add cold water and knead into a stiff dough. Cover with a moist cloth and keep aside. Place dried milk in a bowl and add the desiccated coconut, cashewnuts, almonds, raisins, nutmeg powder and green cardamom powder and mix well. Add powdered sugar and mix properly. With oiled hands divide dough into small balls. Roll out into small circles and cut with a bowl to get a proper round shape. Place stuffing on one half, lightly dampen edges and fold the other half over the stuffing and press edges firmly using a fork. Heat sufficient oil in a wok and deep fry the gujias on medium heat till golden brown. Drain and place on an absorbent paper. Keep the gujias covered with a damp cloth. Let it cool slightly before serving, as the stuffing inside may be very hot.
