Valentine’s day is a few days away and everywhere I look there is something reminding me of it. I don’t really like V-day but I do believe in signs, and this one is a big mega neon one! 🙂
I obviously have to take this seriously I thought and celebrate it, even though I repeat, I am a non-believer. So, I decided to do a cake with a fruit that my darling loves and has little to do with anything Valentine. A banana cheesecake was therefore the answer. I’m going to let this cake speak for itself. It’s delicious, very good looking and the simplest thing to make. So if you want to be a non-conformist but still please your sweets, this is the one to go with!!!

For My Sweets – The Rebellious Valentine’s Day Cake!
the base
120 grams speculaas cookie (if you can’t find these digestive cookies work just fine)
40 grams butter
the filling
5-6 bananas (depending how big they are)
juice of one lemon
3 eggs
450 grams cream cheese
100 grams sugar
1 tsp ground cinnamon
the sauce
2 tbsps yoghurt
150 grams toffee-chocolate candy
Warm the oven to 140°C (285°F).
Crumble the cookies to a fine mix. Melt the butter and mix in well. Empty this mixture into a round springform (I used an 18 inch) and press down firmly. Bake in the oven for 10-15 minutes.
Warm the oven now to 180°C (350°F).
Mash 3 bananas finely with a tablespoon of lemon juice. You can use a kitchen machine but I had so much more fun doing it with a fork! Mix in all the other ingredients of the filling and give it a fine whisking to so that it is a nice homogenous mix. This too you can do in a kitchen machine, but since I don’t have one, I easily achieved the same result by hand.
Pour your cheese-banana mixture onto the base you just took out of the oven. Set in the oven for one hour.
Put the oven off after an hour and let the cake sit in for one more hour. Take out and let cool completely. Now put in the refrigerator to cool off. I let it sit overnight.
Put the coffee-chocolate candy in a pan and let it melt slowly on very mild fire. Once melted add the dollops of yoghurt. You can add more yoghurt than what I mentioned here depending on how sweet you want your sauce. The sweeter you want it the less yoghurt you add.
Slice the rest of the bananas and dip in the remaining lemon juice. Decorate on top of the cooled cake as your heart desires. Dust the top of the cake with some cinnamon. Pour your chocolate sauce on and bite in…
