Masaledar/Spicy Watermelon Gazpacho

Ingredients
  • 3 cups watermelon, deseeded
  • 1 tomato, roughly chopped
  • ½ cup red bell pepper
  • ½ cup red onion
  • 1 cup cucumber
  • 1 tbsp lime juice
  • 1 inch ginger, minced
  • 1 tbsp fennel seed powder
  • handful of mint and basil leaves
  • 1 green chili (add more if you like it spicier)
  • ½ tsp garam masala + more for sprinkling
  • salt and pepper to taste
Instructions
  1. Put all the ingredients into your blender and puree on high for a minute or two until it is liquified. Pour into 2 serving bowls.
  2. Chill in the fridge for at least half hour.
  3. Serve with a sprinkling of garam masala and garnish with mint and basil leaves.
