Ingredients
  • For the Bitter Almond Cookies
  • 225 grams skinned almonds
  • 225 grams confectioners sugar
  • 3 egg whites
  • 1½ tbsps bitter almond extract
Instructions
  1. To make the cookies, first preheat oven to 190°C/375°F.
  2. Grind the almonds with the sugar and the egg white until nice and smooth. Add the almond extract.
  3. Spoon the batter into a piping bag with plain nozzle. Pipe out in dollops a lined baked tray. Press the peak to flatten with a wet finger.
  4. Bake for about 10 minutes or until golden brown. Let cool completely.
