Quinoa Sesame Chocolate Bars + A Giveaway

Ingredients
  • For the Bars
  • 2 tbsps coconut oil
  • 1 cup nut butter (recipe included)
  • 1 cup puffed quinoa
  • ½ cup sesame seeds
  • ½ cup sunflower seeds
  • 2 inch fresh ginger, grated
  • 2 tbsps desiccated coconut
  • 10-12 semi dried figs
  • 2 tbsps honey
  • 120 grams dark chocolate
  • For the Nut Butter
  • 2 cups almonds (or you could any sort of nuts on hand)
Instructions
  1. To make the nut butter, roast the nuts at 150°C/300°F for about 10-12 minutes. Transfer the roasted nuts (whatever kind you choose) to a food processor. Run it on high speed for 10-20 minutes (depending on the strength of the food processor). Scrape down the sides a few times. At first it will have crumbly texture. The nut butter is ready when it is smooth and creamy. Taste and add salt if needed. Lasts for a few weeks in the fridge.
  2. For the bars, melt the coconut oil in a sauce pan on low to medium heat. Cut the dried figs roughly and add to the sauce pan together with the nut butter and freshly grated ginger. Mix until it all comes together and cook for a few minutes on low heat. Remove from the heat and all the other ingredients except the desiccated coconut and chocolate. Taste and add salt if needed.
  3. Line a brownie baking dish with parchment paper and scoop the batter into it. Using your fingertips press everything together tightly into an even rectangle. Put in the refrigerator while melting the chocolate on a double boiler. Pour the melted chocolate over the bars and use a spatula to distribute it evenly. Sprinkle with desiccated coconut and put back into the refrigerator until cold and firm. At least an hour.
  4. Want to eat the bars within a few days then store them in the refrigerator. If not then they can easily be frozen.
