So Friday has come and gone. And Monday will be around pretty soon. As a friend of mine says, it’s always Mondays and Fridays. How true! The weeks continue to fly by and I feel I am a spectator to my own life.
AND, the last couple of days I continued to struggle with my computer and all of its issues. Won a long, hard battle with Apple to replace my, only 6 month old laptop. I felt drunk with exhilaration. This is my 4th replacement. Yes, you heard it right, my 4th replacement from Apple in 6 months! Either I’m jinxed or its a horrible coincidence. I choose to believe its the latter.
I decided to celebrate it all with my twist on this simple recipe. And, oh also to continue to deny that summer isn’t really here yet!
So, here it is. Another fruit recipe coming your way. And this fruit is a favorite. Feta and watermelon is not a surprise. But you WILL be blown away with the hot sauce and garlic topped atop. :)
3-4 cloves garlic (or however many you like)
feta cheese ( i got a tub of 250 grams)
1 tbsp nigella seeds
1 cup fresh mint leaves
hot sauce of your choice/chili flakes
1 tbsp olive oil
salt and pepper to taste
Preheat oven to 420°F or 215°C.
Cut the watermelon into wedges and place on a tray lined with baking paper. Slice the garlic and chop the mint leaves roughly and along with the sliced feta, arrange ingredients on the slices. Sprinkle the nigella seeds, salt, pepper and olive oil. If you choose not to use hot sauce, sprinkle the chili flakes now. Stick in the oven and grill for 15-20 minutes.
Serve with hot sauce, if not using the chili flakes. Perfect for a lazy barbecue!
